After fermentation in tank with wild yeast, we make a second fermentation in bottle - classical method. Vinho de Mesa, white sparkling wine extra brut from Óis do Bairro, Portugal. A very old region of glowing valleys, since centuries known for the production of wines of excellent quality of Cercial, Bical and Maria Gomes. The rural scenery is dominated by the Caramulo mountain. A traditional method with big identity and a well defined Atlantic character. The mousse is very steady and the delicate bubbles are equal and moderately generous. It has a fine nose which combines white blossom and peary aromas, subtile hints of aniseed and smoky flavors. The taste is vibrant with a nice harmony between lemony and salty (iode) flavors. It balances perfectly in the mouth with a certain buttery creaminess and a crispy, mineral finish. This is an elegant wine with freshness, strength, minerality and a mellow fruitiness. It would be an excellent aperitif but also in combination with shellfish and seafood as natural as possible it would do the job! The harvest starts already in August to maintain the fresh and fruity character of the grapes. This way we always have the natural acidity which we love. The first fermentation starts with the natural yeast of the grapes. There is no dosage done, so the wines remain dry. SNI-TEB24 View Nivarius's Producer Page Nivarius 2024 Tempranillo Blanco 2021 was our first importation from Nivarius, makinga deafening noise, given its insignificant cost, and signallingthe seriousness of this entrant to the field of white Rioja. Tempranillo Blanco is a relatively rare white mutation of its ubiquitous red forbear. It brings to the table a unique character –aromatically, it is suggestive of Grüner Veltliner, but the palate is more reminiscent of Rhône varieties such as Roussanne. The ultimate result is beguilingly original, and the price, as already stated, bears no relation to the wine’s quality. Notes from the Producer: VINTAGE CHARACTERISTICS: Dry winter, but abundant spring rains which persisted almost until the beginning of summer. Budding was slightly early. Cool temperatures and some rain during the first part of summer had an important influence on flowering, which did not reach full term. Cool temperatures returned during the ripening period, when we had a climate with a lot of rain. However, fewer grapes allowed us to progress more quickly to maturity and the harvest. HTE-RETNV View Tetramythos's Producer Page Tetramythos N.V. Retsina Tetramythos have stormed Europe with this revolutionary version of Greece’s most infamous vinous product. Treated with a seriousness never before accorded it by anyone, it is made from the estate’s organic Roditis grapes (rather than the Savatiano almost universally employed elsewhere), to which is added before fermentation a moderate quantity of resin drawn from pine trees growing on the property. 40% is fermented on wild yeasts in amphorae, the balance in stainless steel. Extended lees aging is the final touch before bottling. The result is an understated, elegantly dry wine that is a cinch with Mediterranean seafood dishes and will banish forever dubious memories of Greek beach holidays. GLK-SSRNV View Lothar Kettern, Fio's Producer Page Lothar Kettern, Fio Spaetburgunder Sekt Rose Philipp took a principled decision to dedicate his estate to Riesling – except for this wine. Like a lot of Riesling- lovers, he also adores Pinot Noir, but does not deceive himself that he can make the equal of burgundy in Piesport. Sparkling wine, however, is another matter, and this entirely original example completely poleaxed us. Its fidelity to Pinot Noir is total – the nose could simply be nothing else. The creaminess of the texture (it was disgorged in December 2017) gives it a champagne-like luxury. But, and most importantly, the piercing clarityof its soil expression is unmissable. There is an almost volcanic quality to the soil flavours. We hope and expect this wine to become a cult favorite. The speed with which the first tranche sold out encourages us to believe that it will!
