Domínio do Açor 2022 Vinha Celta Jaen
Jaen is, of course, the grape otherwise known as Mencia. As in Galicia, it offers striking perfume, but it performs differently in the granite soils of Dão from the schistous soils of Bierzo or Ribeira Sacra, showing a lovely freshness that is heightened by the inclusion of 30% whole stems. Just 1798 bottles produced in this skimpy vintage.

Additional Fermentation Notes | Crushing of the grapes in an open granite lagar, with a partial destemming of 70%, followed by fermentation in lagar at a temperature of approximately 20-24ºC. Infusion rather than extraction, with the cap worked manually, and 9 days of maceration. In this environment, a semi-carbonic maceration takes place. Malolactic fermentation in tank. The press wine is not incorporated into the final blend. |

Additional Harvest Notes | Always the first red grape variety to be harvested, as it quickly loses its acidity. Even so, it always tastes fresh on granite, due to the mineral sapidity that these soils bring to the variety. |
Other Vineyard Details | Vinha Celta, total 0,65ha (Jaen 0,16ha), 35-year-old vines. In the Jaen section of Vinha Celta, the soils are much richer, moister and siltier than in the Bical section. |
Notes from the Producer: Jaen is a grape variety that takes on a blue fruit hue in granite soils, unlike the darker hue it displays when grown in schist soils (Mencia in Bierzo region normally has this darker profile). In the hot year of 2022, we sought to enhance its freshness by using 30% stems in the vinification process.
