Notes from the Producer: Night Harvest of both of the grapes.
Fernão pires with total Destemming followed by cold maceration for 4 hours followed by pressing. Arinto with total Destemming followed by cold maceration for 6 hours followed by pressing. the must was clarified in cold for 48h by natural settling in refrigerated cement vats. Fermentation in cement tanks, by indigenous yeast (wild fermentation), with controlled temperature at 15- 16 ºC. The wine settled in the cement tanks for 4 months before blending.
