Despite our leaning towards native varieties, we were entirely convinced by this original blend with roughly half classic French cépages. Careful management of vegetation to optimize the aromatic potential of grapes. Manual harvest during early morning to preserve aromatic compounds. Destemming and gentle crushing of the grapes, followed by cold maceration for 4 hours, followed by pressing in opened spout. the must was clarified by natural settling in refrigerated vats for 48 hours. Fermentation grape by grape with indigenous yeasts in cement tanks with controlled temperature of 15-17ºC.
