Forest-Marié N.V. Extra Brut Blanc de Blancs
It was a bottle of this wine that grabbed my attention in that restaurant in Saumur where I was dining with Julien and Corinne Fouet. One never expects very much of the ritual aperitif champagne in France, but this one was startling for its class, its wonderful biscuity evolution and its length on the palate. Clearly an older cuvée than the one we offer you now, it showed the potential of their Chardonnay to evolve into the sort of rococo classic beloved of champagne aficionados. The fermentation was half in oak and half in steel. With just 4.90 gm. of dosage, this is an Extra Brut.

Notes from the Producer: Made only from chardonnay from various plots, this white of whites is distinguished by its bouquet of orchards in bloom. Fresh in attack, fine and elegant, it is ideal as an aperitif and goes perfectly with fish and all seafood.
Silver shimmers play on its pale yellow color. The nose is endowed with a beautiful finesse characteristic of the chardonnay. Light and subtle, there are nuances of pear 1, fresh grapes and white flowers. The attack gives way to a rich and balanced mouth with subtle brioche and fruity notes. The finish is slightly acidic
