Notes from the Producer: Our Estate in the Heart of the Saumur Champigny Appellation
Located in the wine-growing village of Saint Cyr en Bourg,
Domaine Fouet has been perpetuating the family tradition for 12 generations. In the heart of the Saumur Champigny appellation, Julien Fouet now manages a 23-hectare vineyard, combining modern techniques with respect for tradition.
We have been certified organic since 2020 (Ecocert organic label).
A Recognized Estate...
Thanks to a loyal clientele—20% private individuals, 30% restaurants, 20% wholesalers/wine merchants, and 30% exports (USA, Canada, Germany, Belgium, Netherlands, etc.)—Domaine Fouet is able to produce quality wines for discerning customers.
Respect for the Environment...
With a commitment to respecting the environment, the estate's vines are cultivated organically. Indeed, the estate is Certified organic (AB) since 2020.
We also practice eco-grazing: about fifteen sheep graze on some of our plots at certain times. They maintain the vines, reduce the need for mechanical weeding, and contribute to biodiversity.
To increase biodiversity, we are implementing agroforestry, or viticultural irrigation. The combination of trees and agriculture offers considerable advantages, particularly in the area of soil protection. At Domaine Fouet, we have planted apple trees in our vineyards to make organic cider, but you'll have to wait a while before you can taste it!
A commitment to quality...
From vine pruning (low yields) to bottling (no filtration), everything is done to obtain the best possible quality wines, reflecting the terroir of Saumur-Champigny and our expertise.
Wines and Winemaking
Several appellations: Saumur Champigny, Saumur Blanc, Saumur Rouge, Méthode Ancestrale, and sulfite-free wines.
Red wines: Harvested at optimal ripeness, sorted in the winery, macerated for 2 to 3 weeks (extraction of tannins and anthocyanins).
White wines: Hand-harvested, gently pressed (without strong extraction), fermented at low temperature.
Aged in concrete, stainless steel, or 450-liter barrels, blended, and bottled.
Sparkling wines: Méthode Ancestrale (or "Pétillant Naturel") without the addition of yeasts. Alcoholic fermentation begins in the tanks, followed by bottling of the must. Fermentation continues in the bottles, producing gas. This results in a sparkling wine in a single fermentation.
