For her trophy white, Filipa uses only her best and oldest Bical grapes from the Ois do Bairro, where stony clay overlays an extremely chalky subsoil. Fermented burgundy-stye in 500 liter barrels with batonnage every two weeks until bottling in May, this is always rated one of the top whites in Portugal. A study in contrast, with creaminess balanced by an assertive flinty character � as if Meursault were made in Sancerre. LIMITED

Additional Fermentation Notes | Manual harvest, sorting on the vine then in the vat and finally pressing (pneumatic press) to obtain a slow extraction.
Barreling after a slight settling. The grapes are put in oak barrels of 500-600 l and one vat of 2000 litres in which the alcoholic and malolactic fermentations in indigenous yeasts and native bacteria will take place. Breeding will be on fine lees for 10 months, without stirring. One month before bottling, the wine from different barrels is placed in a stainless steel tank for blending. Bottling is done
according to the lunar calendar.
The combination of all this results in a nectar from this unique terroir, particularly complex and perfectly balanced. |

Other Vineyard Details | The nearness of the Atlantic Ocean, the cool nights, a homogeneous clayey-limestone soil from the Jurassic Era, rather shallow creates exceptional conditions. This substratum is also marked by white marls. The pruning is done in Guyot (Poussard) with different works
during the green season (disbudding, trellising, topping). The vineyards are spread over gentle slopes, naturally favoured by efficient drainage. The proximity of the Cértima river creates a perfect microclimate with foggy mornings. |
Notes from the Producer: "Nossa!” Its name is spontaneously evocative . "Calcário” means "chalk" in Portuguese, which refers to the calcareous soil found
in these vineyards.
Located at the very heart of Bairrada, Óis do Bairro is one of Bairrada’s flagship villages and among its most celebrated. The Bical from
Óis do Bairro has been known for centuries for its exceptional quality. It was one of the first white wines of Portugal to be exported to the ex-colonies.
Working with biodynamic practices and being inspired by the viticulture of Filipa's grandmother helped to understand the notion of "un terroir unique” for Bical.
