She says, "I believe that Baga and Bical in Bairrada are like the Chardonnay and the Pinot in Champagne. They need each other to make a balance..." we will just add that the farming is organic, only indigenous yeasts are used, and there is very little RS. This has deservedly become far and away our best selling sparkling wine. Please be prepared for occasional periods of being out of stock!

Additional Harvest Notes | The grapes for the sparkling wines are harvested from different locations. The harvest starts already in August to maintain the fresh
and fruity character of the grapes. This way we always have the natural acidity which we love. The first fermentation starts with the
natural yeast of the grapes. There is no dosage done, so the wines remain dry. |
Notes from the Producer: Traditional method, second fermentation in bottle, unfiltered and unfined to maintain the maximum natural flavours and maintain the quality of bubbles in the wine.
