Words can hardly do justice to this superb bottle, which hails from a parcel of Kimmeridgean marl, a heavier soil that gives rise to a strikingly structured and long-lived wine that is nonetheless unmistakably Sauvignon in character and seductively textured, despite its elevated acidity. Tasting notes : Pouilly Fumé 2017 “Cuvée des Acoins” expresses all the complexity, intensity and subtleties of this vineyard, long rooted in kimmeridgian marls. The richness and intensity of 2017 vintage is well balanced by the minerality of the soil.
It is a perfect match for your monkfish, lobster or white meats (veal blanquette) and why not with foie gras or as an aperitif ?…
Best to drink : from now if you like it for its freshness, and to keep 5 to 10 years. It will get fuller and fuller with time and acquire more and more complexity.
